Life En Route: A drive to Montagu

We recently spent a weekend in Montagu, a neat little town in the mountains about two hours from Cape Town. A lovely drive - and incredible geology!

Pasta with garlic, tomatoes, black beans and fresh herbs
Black beans and rice, with salsa & avocado (every week!)
Banana-walnut waffles
No-knead overnight crusty bread
Chickpea masala with rice
Curried lentil salad with apples and spinach
Chickpea chili and rice, topped with avocado
Lunch wraps: baked tofu, carrot and cucumber slivers, lettuce, and hummus
Split pea soup and corn muffins
roasted sweet potatoes & broccoli, farro, avocado, mushrooms, and creamy almond-maple dressing
Black lentil bolognaise with pasta
Tacos with roasted quinoa "meat", cole slaw and tomatoes
Italian potato salad (new potatoes, zucchini, olive oil, lemon juice)
